CASHEWS FROM GHANA

Comes from the seed grain of a cashew tree, a tropical evergreen tree with a short, often irregularly shaped trunk. The tree can grow up to 15 meters tall. Production begins after three years, but it takes eight years before economic harvests can begin. The cashew nut, actually the seed kernel of a fruit, develops on the tree and the fruit is called an “accessory fruit.” The cashew apple, large and pear-shaped, is edible but not exported. After ripening, the apples fall to the ground and are ready to be harvested. The nuts are separated from the apples, after which they will dry in the sun for 1-3 days. Then they go to a buyer or factory for processing. Processing includes steaming, drying and peeling, which is a labor-intensive process that also makes cashews relatively expensive. Major cashew-producing countries include Vietnam, India, Ivory Coast, Tanzania, West African countries and Brazil. Cashews are often shipped from Africa to India and Vietnam for processing, but there is also a growing trend to process the nuts in the country of origin.
